Mauviel 1830 — Technical Frequently Asked Questions
For nearly 200 years, Mauviel 1830 has been crafting exceptional cookware in Villedieu-les-Poêles, Normandy, a town with over 800 years of copper-working heritage. Below you'll find answers to the questions we hear most often about our cookware, materials, and care.
Is Mauviel cookware fully clad, and does the core extend up the sides?
Our lines are fully clad. Our M'COOK, M'COOK B, M'Elite B and M'Elite collections are true 5-ply construction: three layers of aluminum sandwiched between two layers of 18/10 stainless steel, extending from the base all the way up the sidewalls for consistent, even heat across the entire cooking surface. Our M'Heritage copper pieces are bilaminated (90% copper, 10% stainless steel interior), and because the copper itself forms the body of the pan, you get outstanding conductivity from bottom to rim. Our M'URBAN 4 collection is a true 3-ply construction : one layer of aluminum sandwiched between two layers of 18/10 stainless steel, extending from the base all the way up the sidewalls for consistent, even heat across the entire cooking surface. Our M'3 S collection is a true 3-ply construction : one layer of aluminum sandwiched between one layer of 18/10 stainless steel, and one of copper extending from the base all the way up the sidewalls for consistent, even heat across the entire cooking surface. In all cases, heat is distributed thoroughly across the full profile of the piece, not just the base. Our M'6 S collection is a true 6-ply construction: an exterior layer of polished copper, three successive layers of aluminum, a layer of magnetic stainless steel, and an 18/10 stainless steel interior, extending from the base all the way up the sidewalls for consistent, even heat across the entire cooking surface.
How does each material interact with my food?
Our stainless steel-lined copper (M'Heritage M'150, M'200 and M'250) and our stainless steel lines—5-ply M'COOK, M'COOK B, M'Elite and M'Elite B, 3-ply M'URBAN 4, and our copper-clad M'3 S and M'6 S—all feature a non-reactive 18/10 stainless steel cooking surface, so they won't discolor or alter the flavor of acidic ingredients like tomatoes, wine, or citrus. On M'3 S and M'6 S, the copper sits on the exterior for conductivity while your food only ever touches the same non-reactive 18/10 stainless interior. Our M'Tradition tin-lined copper is also safe for cooking, though tin is softer and will develop a natural patina over time. The M'Passion line is unlined copper, designed exclusively for specialty tasks like whipping egg whites and making jam; unlined copper reacts with most foods, so it should not be used for general cooking. Our M'STEEL carbon steel develops a natural seasoning with use, creating a progressively more non-stick surface that's ideal for searing and high-heat work.
Which Mauviel material is best for my cooking style?
If you prize precise temperature control and rapid response, our M'Heritage copper lines are the gold standard, favored by professional chefs worldwide—choose stainless-lined M'150, M'200 or M'250 for everyday cooking, or tin-lined M'Tradition if you love classic French copper. For cooks who want copper's conductivity and signature look with full induction compatibility and easier upkeep, M'6 S is our 6-ply induction copper, while M'3 S pairs a copper exterior with a practical stainless interior. For professional-grade performance with lower maintenance, our 5-ply stainless steel lines deliver fast, even heating and make versatile everyday workhorses: M'COOK and M'COOK B offer a sleek polished finish, while M'Elite and M'Elite B deliver the same performance with a distinctive hammered finish. If you want that even, durable stainless performance at a more accessible price, our 3-ply M'URBAN 4 is a great entry point. M'STEEL carbon steel excels at high-heat searing, making it a natural choice for steaks, crêpes, and stir-frying. And if you're passionate about pastry or confectionery, the unlined copper M'Passion bowls and basins are purpose-built for those crafts. Should I buy a set or individual pieces?
Sets are a great value if you're building a kitchen from scratch or upgrading several pieces at once, and we offer curated sets at significant savings from individual pricing across most of our lines—including our M'Heritage copper, our 5-ply stainless M'COOK and M'COOK B, our 3-ply M'URBAN 4, our copper-clad M'3 S and M'6 S, and our M'STEEL carbon steel frying pan sets. If you already own cookware you love and want to fill specific gaps, buying individual pieces lets you choose the exact sizes and shapes you need. Our M'Elite and M'Elite B collections, for example, are offered as individual specialty pieces like sauté pans, cocottes, and rondeaus, so you can add a statement piece without committing to a full set, and our unlined copper M'Passion bowls and basins are likewise sold individually for their specialty tasks. With over 1,000 products across our lines, we're happy to help you find the right fit; just reach out to customerhelp@mauviel.com.
Is Mauviel cookware safe for high heat and oven use?
Our copper and stainless steel lines handle oven temperatures with confidence, making them perfect for recipes that start on the stovetop and finish under the broiler or in the oven. One important note: because copper conducts heat so efficiently, we recommend using only about 60% of your burner's maximum setting (for example, level 6 out of 10) to avoid overheating. Our M'Tradition tin-lined pieces are the exception to high-heat use; tin begins to blister at approximately 460°F (235°C), so keep those below that threshold. All handle types will get hot in the oven, so always use protection when removing pieces.
Is Mauviel cookware compatible with my cooktop?
Our traditional copper cookware works beautifully on gas, electric, and ceramic cooktops but is not natively induction-compatible—this includes our M'Heritage copper (M'150, M'200, M'250), our tin-lined M'Tradition, our copper-clad M'3 S, and our unlined M'Passion pieces. If you cook on induction, we offer a Mauviel induction interface disk made with magnetic stainless steel that lets you use any of these copper pieces on an induction burner. Our M'6 S collection is the exception: it's 6-ply copper built with a magnetic stainless steel layer, so you get copper's signature look and conductivity with full induction compatibility right out of the box. Our 5-ply stainless steel lines (M'COOK, M'COOK B, M'Elite, M'Elite B), our 3-ply M'URBAN 4, and our M'STEEL carbon steel are likewise compatible with all cooktop types, including induction, with no adapter needed.
How much maintenance is required?
Most of our lines are relatively low-maintenance: hand wash with warm, soapy water and dry promptly. This applies to our stainless steel-lined copper (M'Heritage M'150, M'200, M'250), all of our stainless steel lines—5-ply M'COOK, M'COOK B, M'Elite and M'Elite B, and 3-ply M'URBAN 4—and our copper-clad M'3 S and M'6 S, since their interiors and cooking surfaces are non-reactive 18/10 stainless steel. On any piece with a copper exterior (M'Heritage, M'Tradition, M'3 S and M'6 S), the copper will develop a warm patina over time, which many cooks cherish, but you can restore its shine with a copper cleaner whenever you like; the same is true of the brass handles on our M'COOK B, M'Elite B and M'200 B pieces. Our M'STEEL carbon steel requires seasoning before first use and benefits from occasional re-seasoning; avoid soap and simply wipe clean after cooking. M'Tradition tin-lined copper will eventually need retinning as part of normal use, which is a routine service rather than a defect. Our M'Passion unlined copper needs a little extra attention—because the copper is bare, hand wash and dry it after each use and polish it to keep it bright, and remember it's intended for specialty tasks rather than everyday cooking. Overall, a little care goes a long way toward keeping your Mauviel pieces performing for generations.
Does Mauviel cookware have riveted or welded handles?
Mauviel cookware uses sturdy riveted handles across its product lines, providing a secure, time-tested attachment that holds up to decades of daily use. Depending on the line, you can choose from stainless steel, brass, or cast iron handles. Stainless steel handles stay cool on the stovetop, while brass and cast iron handles will heat up during stovetop cooking. In the oven, all handle materials get hot, so always use an oven mitt or towel.
What is Mauviel's warranty policy?
Mauviel offers a limited lifetime warranty that covers manufacturer's defects in materials and workmanship under normal household use. The warranty does not cover commercial use, misuse, overheating, damage from cooking sprays, water spots, hot spots, or general daily wear and tear. Retinning of M'Tradition tin-lined pieces is considered routine maintenance and is also not covered. To file a claim, you'll need your original proof of purchase; contact our customer service team at customerhelp@mauviel.com for assistance.
